Gourmet travel: Canadian style

In this episode, Ian travels to some beautiful lodges and inns in search of great cheese. He visits a tranquil Nova Scotia lodge for a lesson in cheese making. He heads to Quebec for a tour that includes a tasting from one of the most decadent cheese carts in Canada. And he gets a recipe from a BC gourmet for a lasagna that’s loaded with Canadian artisanal delights.

Jon Cash, head chef at BC’s Soule Creek Lodge, was kind enough to share the secret of his signature dish. His Three-Cheese Polenta Lasagna with Chorizo Sausage contains cheeses from across the country, including Balderson Cheddar, feta from Little Qualicum Cheeseworks and Natural Pastures’ “Amsterdammer.”
